Vegetarian Chili

Ingredients
1 tablespoon vegetable oil1 cup chopped onions3/4 cup chopped carrots3 cloves garlic, minced1 cup chopped red bell pepper2 stalks chopped celery1 tablespoon chili powder1 1/2 cups chopped fresh mushrooms2 cups chopped zucchini1 (28 ounce) can diced tomatoes with liquid1 (15 ounce) can kidney beans 1 (15 ounce) can black beans1 (15 ounce) can pinto beans1 tablespoon ground cumin1 1/2 teaspoons dried oregano1 1/2 teaspoons dried basil2 cups all natural or organic beef broth1 cup salsa, optional
Directions
Heat oil in a large saucepan over medium heat. Saute onions, carrots, and garlic until tender. Stir in red pepper, celery, and chili powder. Cook until vegetables are tender, about 6 minutes.
Stir in mushrooms and zucchini, and cook 4 minutes. Stir in tomatoes and beans. Season with cumin, oregano, and basil. Add about 2 cups of beef broth and some salsa (optional). Bring to a boil, and reduce heat to medium. Cover, and simmer for 20 minutes, stirring occasionally.
