Gluten free Cajun Shrimp Fettuccine

Salt & Pepper to taste 1 Tbl chopped shalot1/2 medium Jalapeno, diced1/4 cup fresh red bell pepper strips1/4 cup fresh green bell pepper strips1/4 cup sliced onion1 tsp Cumin 1/2 tsp chili powder1/4 tsp paprika2 tsp minced garlic1/2 Louisiana Hot sausage,diced1/2 cup heavy cream1 tbl salted butter6 oz cooked Gluten Free Brown Rice Fetuccine4-5 oz raw shrimp,peeled,deveined,tail off
Recipe makes 1-2 servings
Boil water and cook 6oz of Pasta per person
Use a saute pan on medium heat and Add butter.When pan is hot and butter has melted,add shalots,onion,all peppers,and garlic, and stir until onions become soft.Season with ground pepper and a pinch of kosher salt.Add diced sausage and cumin/paprika/chili powder, and stir until it coats all vegetables, add diced tomatos, and chopped cilantro and stir until liquid begins to decrease.Add 1/2 cup of heavy cream and stir until bubbly and hot.Add 4 oz of shrimp.Stir sauce with shrimp until shrimp curls and becomes orange/pink.Add warm pasta to mixture a coat pasta with sauce then serve in bowl and top with green onions.
*You can make this dish more spicy by adding more Jalapeno,more chili powder, adding chili flakes during the saute of the vegetables, and/or more hot sausage.
