15 Lasagne noodles1 lb ground turkey1 medium onion, diced small1 tbs minced garlic1 lb container of cottage cheese (2% lowfat)1 26 oz can Spaghetti sauce1 15 oz can petite diced tomatoes2 large eggs10 ounces of shredded monterey jack cheeseSeasonings to taste - I added garlic powder, black pepper, salt, onion powder, and Italian seasoning
Cook the noodles per package directions. Meanwhile, brown the meat with onions and minced garlic.
Mix the cottage cheese with the eggs, seasonings, and diced tomatoes.
Layer the noodles, meat mixture, and cottage cheese mixture in a large casserole dish, and pour the spaghetti sauce over the top. Sprinkle the cheese on top of the sauce.
Bake at 350 for 1 hour, or until bubbly and cheese is lightly browned.
Serve with a green salad to round out your veggie servings for the day!
