2 TBSP EVOO2 tsp garlic minced11 med potatoes (3 1/4 LB) peeled cut and boiled to soft state3 leeks washed and trimmed - chopped1 med onion chopped3 TBSP dried rosemary blend spice7.6 CUPS homamde veg stock
Boil potatoes, set aside. In stock pot, add oil, garlic onion, and leeks, cook until onion is soft, add potatoes, rosemary and broth - simmer for a few minutes - mash potatoes slightly, puree in blender. This recipe makes about 14 cups. Freezes well.
