Roasted Cauliflower with Parmesan, Raisins and Almonds

Ingredients
2 sprays olive oil cooking spray2 tsps extra virgin olive oil1/2 lemon (juice only)2 tbsps grated parmesan cheese1/2 cup golden raisins1 head large cauliflower, cut into florets1/4 cup slivered almonds1/3 cup bread crumbs
Directions
1.Pre-heat oven to 400° F (200° C).
2.Cover roasting pan with foil and spray with olive oil cooking spray.
3.Steam cauliflower for about 5 minutes until crisp-tender. Transfer cauliflower to roasting pan.
4.Stir together raisins, breadcrumbs, parmesan, almonds and oil in a medium bowl.
5.Sprinkle breadcrumb mixture over cauliflower.
6.Roast until crumbs are toasted, about 20 minutes.
7.Drizzle lemon juice over top and roast 5 minutes longer.
8.Serve hot or at room temperature.
