Bison Chili- no beans!

Ingredients
bisonbacononiongarlicunsweetened cocoa powderchili powderdried oreganopaprikacan finely chopped tomatoespeeled carrots1.5 cups water or beef broth1 tbsp apple cider vinegar
Directions
slightly cook bacon to render out fat. add chopped onion and stire into bacon. cook until just starting to get translucent. add bison and cook over medium heat until brown. add bacon grease as needed to keep meat from getting too dry as you cook it. add spices, water or broth, tomatoes and carrots, stir well. Simmer, covered, for one hour, stirring occasionally. Do not allow meat to stick to pan. Add vinegar and cocoa powder and simmer uncovered for 20 minutes.
