Zucchini Squash Bake

1 Large Zucchini1 Large Squash1 Fresh Tomato1 Can Rotel Tomatoes1 med White or Yellow onion1 Bell Pepper1 Red Pepper4 cloves of fresh garlic1 cup cubed velveeta
Slice all vegetables. Place in casserole dish. Pour canned tomatoes over mix. Bake in oven at 350 for 25 minutes. Take out of oven and put velveeta cubes on top. Place back in oven for an additional 10 minutes or until cheese is fully melted. Let cool for 10 minutes. Makes about 6 1cup servings
