Asparagus, potato and onion frittata

2 tbsp olive oil2 cups shredded potatoes1/4 cup chopped onion1/2 tsp salt1/2 tsp pepper1 lb thawed frozen or fresh asparagus1 cup diced ham6 eggs1 tbsp milk1/2 cup shredded mozzarella1/2 cup shredded cheddar cheese1 tbsp chopped fresh basil
Preheat oven to 350.
Heat olive oil in large skillet. Cook Onion and potato until start to brown. About 5 min. Season with salt and pepper. Add the asparagus and ham and continue to cook until sparagus is tender, about 7 min. Transfer to 9x13 greased baking dish. Whisk eggs and milk in dish, and pour over potato and ham mixture. Scatter with both cheeses. Bake for 20-25 min. Let stand for 5 min before cutting.
Tips: substitute fresh tomatoes for asparagus. Use already shredded potatoes for a timesaver!
