Tuna Coleslaw

Ingredients
One five oz can of tuna canned in water2 tablespoons of fat free or reduced fat sour cream1 teaspoon garlic2 tablespoons dijion mustard1 table spoon of basalmic vinegar2 cups of shredded cabbage*optional: ground ginger, soy sauce, and/or dill weedtry it in seaweed paper (the stuff they wrap sushi in)
Directions
Mix everything except the cabbage in a medium sized bowl. Make sure all of the ingredients are blended together well. Add cabbage and stir well making sure to coat the cabbage with the tuna mixture well. If you are using seaweed paper, spread a thin layer of the salad on a paper and roll it up.

This recipe travels very well and is extremely quick and easy if you buy pre-shredded cabbage in the produce department of your local grocery store.

Makes one large serving for someone who is really hungry or two small servings for a low calorie snack.

    I made this for lunch for the kids and I today, was lovely. I did tweak it some, as I didnt have all said ingredients, but overall it came out great, we had it on wheat bread. Love the crunch of the coleslaw! - 12/27/12
