Ingredients
3/4 cup skim milk1 large egg1/4 cup canola oil1/4 cup applesauce2 cups flour3 tsp. baking powder3/4 tsp. salt1 cup blueberries
Directions
Preheat oven to 350 degrees. Spray 12 cup muffin pan.
Beat together milk, egg, oil and applesauce. Stir in flour, baking soda and salt just until moistened (batter will be lumpy). Fold in blueberries. Fill muffin cups evenly and bake at 350 degrees for 20-25 minutes. Remove immediately from muffin pan. Enjoy!
