Jamie Oliver's Healthy Mushroom Soup

900g/2lbs Mushrooms sliced thin4 TBS Olive Oil2 large onions chopped2 cloves garlic4 heaping TBS flour8 cups/4pts of Chicken Stock (I used Pacific Rim Mushroom Stock)2 Bay Leaves (WHOLE)Thyme - one sprig just leaves, choppedPink Salt and Black Pepper to Taste
1. Wipe dirt from mushrooms and slice thin
2. Chop onions
3. Heat oil in saucepan
4. Add onions and garlic, cook until softened
5. Turn up heat, add mushrooms and cook for about 5 min
6. Pour in stock, bring to boil, add bay leaves, parsley, and thyme
7. Simmer 15 min
8. Remove bay leaves
9. Allow to cool slightly if prefer
10. Pour carefully into food blender in stages or use hand held blender to blitz until smooth
11. Season to taste
12. Serve
