Pecan-Crusted Tilapia

1 Tilapia filet (4 oz.)10 Pecan Halves (.5 oz)2 tbsp Coconut Flour1/2 tsp Old Bay Seasoning1/2 tsp Garlic Powder1/4 tsp Cayenne Pepper1 tbsp Ener-G Egg Replacer1 tbsp Safflower Oil
Pulse the pecan halves in a food processor until finely chopped, add the coconut flour and spices and pulse to combine.
Rinse and dry the tilapia filet. Coat with the dry egg replacer and shake off any excess. Lightly moisten the egg replacer by sprinkling water over the surface of the fish, this will allow the pecan mixture to stick to the fish.
Press the pecan mixture onto both sides of the fish, and refrigerate for 5 minutes to set.
Heat oil in a saute pan over medium heat. Place filet in the pan and cook until golden brown on both sides, approximately 5 minutes per side.
Serve immediately. Makes 1 serving
