Overnight Apple Oatmeal Muffins

Ingredients
1 cup old-fashioned oats2 cups low-fat Buttermilk1 3/4 cups Whole Wheat Flour1 cup packed Light Brown Sugar1 tsp. Baking Powder1 tsp. Baking Soda1 tsp. Salt1 tsp. Ginger, ground1 Tbsp. Cinnamon, ground1 tsp. Nutmeg, ground1 tsp. Vanilla2 large Eggs3 medium Apples, grated
Directions
Combine oats and buttermilk in a bowl. Cover and refrigerate overnight.
The next morning, preheat oven to 350°.
Place buttermilk mixture, flour,brown sugar, baking powder, baking soda, salt, spices, vanilla and eggs in a large mixing bowl. Beat with a mixer at medium speed until smooth. Fold in grated apples.
Place 1/4 cup batter into each of 24 muffin cups. Bake at 350° for 20 minutes. Remove muffins from pans immediately and place on a cooling rack.
Makes 24 muffins.

    I made this recipe just last night. I made a few adjustments, substituting 4 mashed bananas for the grated apple and instead of just soaking the oatmeal I soaked the flour, oatmeal, and sugar. The recipe turned out super yummy and just as described! I will definitely be making this again!!! - 1/20/11

    Thanks for the tip. I'm going to try soaking my flour next time, too. One thing I forgot to mention is that you will need a longer cooking time if the fruit or add-ins are really juicy.

    These tasted really good,but were almost soggy, even after baking for an extra 3 minutes. Should I try to press out some of the liquid from the grated apples before putting them in the batter? - 1/25/13
