Black Bean & Vegitarian Sausage Soup

Ingredients
1 medium onion, chopped1 large carrot, chopped1 stalk of celery, chopped2 large cloves of garlic minced1/2 tsp dried oregano1 medium potato2 cups vegetable broth2 cups diced tomatoes or large can1 package Morning Star Itillian Sausage, sliced1 can black beans drained and rinsedSalt and pepper to tastePam cooking spray
Directions
1. Heat large pot with low fat cooking spray. Add onion, carrot, celery and salt and pepper; cook and stir over medium heat until vegetables begin to soften.
2. Stir in garlic, oregano, potato, broth and tomatoes; heat to boiling. Stir in sausage. Cover and simmer gently for at least 1/2 hour to blend flavors.
3. Add beans and let heat through, about 15 minuets.
4. Salt and pepper to taste.
