Sausage & Quinoa Stuffed Acorn Squash

1 Acorn Squash1 Cup Morningstar Farms Sausage Crumbles1/2 Sweet Onion, diced1/2 Granny Smith Apple, diced1 Celery Stalk, diced1 Carrot. diced,1 clove Garlic, minced1 cup Quinoa, cooked in vegetable broth 1/2 tsp dry Sage1/2 tsp OreganoSalt & Pepper, to taste1 tbls Sunflower Seeds
Preheat oven to 350 degrees
Cut the squash in half and remove seeds. Place in a baking dish, cut side down, with about an inch of water. Bake in the oven for 40 minutes
While the squash is baking, brown the sausage. Remove from the pan and saute the onion, carrot, apple, garlic and celery in the same pan, seasoning with salt and pepper. Return the sausage to the pan. Stir in the quinoa, sunflower seeds,
When the squash has baked, discard the water and turn the squash over. Stuff with the sausage mixture. Return to the over for about 20 minutes.
After removing from the oven, sprinkle with grated parmesan cheese.
