Quinoa and black beans

Ingredients
1 onion2 cup quinoa1 red pepper1 zucchini1 cup chicken broth (or more)1 can of diced tomatoes1 can black beanscayennegarlicsaltpeppercumin
Directions
Cook onions until translucent.

Add quinoa and broth and spices and tomatoes. Simmer at medium heat until liquid is almost absorbed. About 10 minutes.

Add beans and veggies. Cook 5 more min.

Let stand for 5 min.
