Ingredients
8 - 10 tortilla chips1/4 c cooked pinto beans1 oz grated low fat cheddar cheese1/2 c chopped lettuce1/2 c chopped tomato1/2 c chopped cuccumber1 T chopped onion1/4 c no fat cottage cheese1 T low fat sour cream2 T fat free mayo1 T black olives chopped2 T salsa
Directions
Put tortilla chips on the bottom and contiue to build 'haystack by adding all ingredients one after the other. Enjoy!! This is a very large plate of food and very filling and could really be 2 meals. Quantities may be adjusted according to taste Some people add some cooked rice as well as other salad veggies. Recipe has been calculated without rice or other veggies. For a non vegetarian dish ground chicken turkey or beef may be added
