Turkey Meatloaf with Brown Gravy

Ingredients
Meatloaf:1 & 1/4 LB's Ground Turkey: I used Jenny O from Target (Extra Lean)1-jar Red Pepper and Onion Relish (Archer Farms; Target)1-Sleeve Saltine Crackers Pulverized1/4 Large White Onion, finely diced2-Celery Stalks, finely diced3-Egg whites2 TBS. Parmesan Cheese2 TBS. Minced Garlic1 TBS. Better Than Bouillon Beef Base (Soup Aisle)1 TSP. Garlic Salt1 TSP. Black PepperBrown Gravy:2-Cups Beef Stock3 TBS. Corn Starch1 TSP. SaltBlack Pepper to taste
Directions
1. With your hands, mix all meatloaf ingredients together in large bowl, ensuring that they are all equally combined.

2. Spray a large 9x13 glass baking dish with nonstick cooking spray, or coat with cooking oil using a paper towel.

3. Form the meat mixture into the shape of a loaf. It should be almost the entire length of the pan

4. Bake uncovered at 400 degrees for 30 minutes, then turn oven down to 350, and bake an additional 30 minutes, or until meat thermometer reads 180 degrees in center of the loaf.

Gravy:

1. About 10 minutes before the loaf is ready to take out of the oven, bring the beef stock to a boil in a saucepan

2. As the stock is heating, take the cornstarch and combine with a few tablespoons of water, stirring until combined

3. When the stock begins to boil, whisk in the cornstarch and water solution. The mixture will thicken very quickly. Be sure to turn down the heat, otherwise your gravy will boil over!

4. Salt and pepper to taste and ladle over sliced meatloaf. Enjoy!!!

5. Feel free to add other herbs and spices to the gravy. The recipe is very basic, but also a healthy gravy as there is no fat or dairy.
