Garlic and Herb Fish Cakes

2 5oz cans of low sodium tuna1 1/2 cups mashed potatoes1 Tbs Miracle Whip Light1 tsp parsley1 tsp garlic chivesSalt and pepper to taste1 large eggAll purpose flour for light coating4-6 Tbs canola oil
In a large bowl mix together tuna, potatoes, mayo, and seasonings. When blended, add egg and mix slowly. Mix just enough to bind everything together. Refrigerate for 20 min.
Wet hands and shape mixture into 8 patties. Arrange on plate, cover with plastic wrap and refrigerate for an additional 5 minutes.
Sprinkle flour on a plate, and press patties lightly on both sides, just enough to coat.
Heat oil in skillet and gently fry the patties over medium-low heat for about 2 minutes on each side or until browned.
Transfer to paper towel lined plate prior to serving.
