Ingredients
1/2 cup fresh baby spinach, chopped1/2 cup liquid egg substitute1/4 cup reduced-fat shredded cheddar cheesesalt to taste
Directions
Spray microwave safe bowl with cooking spray. Combine spinach, egg substute and cheddar in bowl and stir. Microwave on HIGH for 2 minutes. Stir. Microwave for 1 more minute. Season with salt. Serves 1.
