Mammy's Blueberry Muffins

2 cups of unbleached all purpose flour3/4 cup of granulated splenda3 teaspoons of baking powder1/4 teaspoon of salt1/4 cup of egg substitute1/4 cup of unsweetened applesauce1 cup of skim milk
Preheat oven 400 degrees. Mix flour, splenda, salt, and baking powder in a bowl. Make a well in the middle. Small bowl mix the milk, egg substitute, applesauce together. Pour at once into the well and blend (do not beat). Fold in the blueberries and spoon into muffin tins (lined or unlined). I spray mine with cooking spray and don't use the liners. Bake 25 minutes or until golden brown. If you don't like blueberries, substitute your favorite berry. You can also make cheese muffins using 2% sharp shredded cheddar instead of blueberries. Serving size 1 muffin.

I thought these muffins were pretty good. I used spelt flour, and stevia instead of splenda. The taste and texture I thought were really good. I used paper muffin liners and they stuck really bad so next time I will use Pam baking spray with just the muffin tin. I will definitely make again!! - 7/25/12
