Mammy's Buttermilk Cornbread

Ingredients
2 cups buttermilk cornmeal1 cup of lowfat buttermilk1/4 unsweetened applesauce1/4 egg substitute2 tablespoons of splenda
Directions
Preheat oven to 425. Spray iron skillet with pam cooking spray. Mix all ingredients together. Add more buttermilk if consistency is too thick...however it should be pretty thick. Pour into iron skillet and bake about 30 minutes or until golden brown and toothpick comes out clean in the center. Makes 8 to 10 servings.
