Pineapple Chicken Stew

Ingredients
* Chicken Breast, no skin, 1 unit (yield from 1 lb ready-to-cook chicken) * Pineapple, fresh, 2 cup, diced * Pineapple Juice, 1 cup * Carrots, raw, 5 small (5-1/2" long) * Potato, raw, 3 small (1-3/4" to 2-1/2" dia.) * Brown Sugar, 4 tsp packed * 2 Green onions
Directions
Mix all ingredients in slow cooker and add sauce...

Sauce:
1/4 chicken broth
2 tbsp sot sauce
1 tbsp brown sugar
1/2 tsp ground ginger
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
1 C. pineapple juice

Cook on low for 4 to 6 hours or on high for 2 to 4 hours.

After chicken is cooked and potatoes and carrots are soft add 2 tbsp water too 2 tbsp corn starch and add to slow cooker. Stir and cook for another 20 minutes

    Fantastic recipe! I am usually an avid avoider of fruit in a hot meal but this recipe is an exception to the rule. The sauce is really tasty; chicken is really tender from being in crockpot for hours, and the pineapple adds a nice tang. This will become a staple! - 1/16/11
