Vegan Peanut Butter Cookies

Ingredients
1 C. Natural Peanut Butter1/2 C. Smart Balance Light Buttery Spread1/2 C. Natural Sugar1/2 C. Packed Brown Sugar3 tbsp Ground Flax Seed3 tbsp Unsweetened Soy Milk1 tsp Vanilla1 1/4 C. Whole Wheat Flour3/4 tsp Baking PowderPreheat oven to 375. In small bowl, mix flax seed with equal parts water. Let sit. In large bowl, cream together sugars and butter, until blended. Beat in the flax seed mixture, soy milk, and vanilla one at a time. Combine the flour, baking powder and salt; stir into creamed mixture.Roll tablespoonfuls of dough into balls. Place cookies 2 inches apart onto ungreased cookie sheet. Press with fork.Bake 8-10 minutes.
Directions
Makes somewhere between 12-24 cookies.
