Spicy Baked Tostitos Nachos

Ingredients
Chicken Breast Organic fat-free black beans (1/2 can)Baked! Tostitos (Scoops)Fat Free Mile Mexican CheeseMushrooms (4 sliced)SalsaJalapeno Peppers (sliced thin)Cooking Spray (all-natural, canola is my preferred)
Directions
spray frying pan with cooking spray, on medium heat. Take one half hormone free (if possible) chicken breast and flatten out evenly Sprinkle herbs, salt-free seasonings (I prefer Mrs Dash) Lay on frying pan. Add mushrooms. Cook until done. Cut up into tiny chunks and reserve.

In the meantime, warm up black beans in the microwave for 3 minutes. Remove from microwave and begin to prepare your nachos. Count out 24 and sit on two plates. Use a slotted spoon and measure out 1/2 of the beans into each scoop. Then take chicken/mushroom mixture and spoon into each scoop. Top with salsa (as much as you like as this is very very low in calories). I prefer 1/4 cup per serving. sprinkle Jalapenos, then cheese over all. (Heat in the microwave for 30 seconds to melt cheese)~~ENJOY!!

Result is a delicious low-fat appetizer or can be made into a meal. I love the spicy nature of this dish. LOW IN FAT & Your family and friends will love it!
