Sweet and Spicy Shrimp Stir Fry

Ingredients
1 tsp Extra virgin olive oil1 red bell pepper, sliced in strips1 yellow bell pepper, sliced in strips1 medium onion, chopped1/3 cup Maple Grove Farms Fat Free Raspberry Vinaigrette1/3 cup Maple Grove Farms Fat Free Balsamic Vinaigrette12 oz raw shrimp1/4 cup Polaner's Sugar Free Orange Marmalade with Fiber2 chipotle peppers, chopped2 tbsp adobo sauce
Directions
Saute bell peppers and onions in olive oil until tender. Add shrimp and both vinaigrettes. Saute until shrimp is cooked through. Add chipotle peppers, adobo sauce, and marmalade.
Makes 4 1-cup servings

Tip: serve over brown rice or whole wheat pasta (not included in calories).
