Turkey Meatloaf w/mushroom barley soup mix from KAF

2.66lbs of Shady Brook extra lean ground turkey breast2 fresh eggs1/2 cup low sodium chicken broth1 cup diced onion0.5 cup diced carrotsMushroom barley soup mix from King Arthur Flour, used dry into turkey mix
Mix up egg and broth, add the Mushroom soup mix to that and mix well.
roast the onion and carrots first, then add to the turkey and soup mixture. mix well with your hands.
shape into two mini loaves and we got 4 turkey burgers out of this.
Bake at 350 until done, probably about 40 minutes or so.
