Pico Omelet

Ingredients
1 large omega-3 rich egg1 tsp country crock olive oil blend margarine s&p to taste1 oz monterey jack w/ jalapenos1 tbsp pico de gallo1 tbsp extra cilantro (if desired)
Directions
Mix egg with 1 tsp water. Pour into small skillet and let cook without stirring. Add jalapeno jack cheese, pico and cilantro. Flip half over to form omelet. Cook thru until egg is completely set.
