Easy Potato Curry

Cooking oil1 baking potato1 tbsp curry powder2 tbsp flourHalf a large onion1.5 cup Vegetable BrothCelery to tasteCoconut milk (small can)1 cup chick peas1 cup peasPeanuts if desired (crunch!)
Serves 3-4
-Add oil to pan on medium-high heat
-Dice onions and celery
-Add both to pan stirring often for around 8 minutes (or until browned)
-Reduce to medium heat
-Add curry and flour, stir well
-Add broth and let simmer 15-20 minutes or until thick and potatoes cooked
-Stir in coconut milk, chick peas and peas and bring back to a simmer for one minute
Serve alone, over rice or with bread.
