1 whole wheat tortilla2 egg whites 2 ham slices or canadian bacon diced1 ounce pepper jack cheese shredded1 tablespoon ketchup1 tablespoon salsadash garlic powderdash black peppernon-stick cooking spray
Heat up a flat skillet on medium heat. Mix together ketchup and salsa and set aside. In a small bowl beat egg whites with garlic powder and black pepper. When skillet is hot cook the diced ham for just a couple of minutes and remove. Next spray skillet with non-stick cooking spray and cook egg whites until they are just about done and remove. Wipe skillet with a wet paper towel to remove any leftover egg. Spray the bottom of the tortilla with non-stick spray and place in skillet. Top with the ketchup and salsa mixture and spread to cover (the back of a large spoon makes it easy.) Top tortilla with eggs and ham and finish with the shredded pepper jack cheese. When the bottom of the tortilla is light brown remove and cut like a pizza.
