Ingredients
1 Bell Pepper1/2 Cup - Ground Meat (of your choice)1/2 Cup - Rice (of your choice, I used Old Elpaso Cheesy Rice)1.5 Sliced Cheese2 tbsp - Salsa (usually I just use a tomato sauce I add spices to)
Directions
Brown meat in skillet, drain
Cook rice, drain
Cut top off pepper, clean out any seeds and ribs from the inside
Lay one slice cheese in side pepper
Top with 1/2c of rice
Top with 1/2c of meat mixture
Spoon sauce/salsa over the top evenly

Cook at 150 degrees until peppers look a little dry, sometimes they will darken around the top rim, this is okay and adds a little flavor.

Remove from over and use the last 1/2 slice of cheese, cut into strips, and layer over top of pepper. Lower heat and cook till cheese has melted.
