Hash Brown Potato Soup

Ingredients
1 Pkg Ore-Ida OBrien Frozen Hash Brown Potatoes, ThawedWater (to cover)2 Chicken Boullion Cubes8 oz Velveeta (2% milk)2 TBS butter substitute3/4 cup Light Sour CreamGarlic Powder, Salt & Pepper to Taste
Directions
Place hash brown potatoes in large pot and add water, just enough to cover. Add boullion cubes. Boil for 10 minutes or until potatoes float. Mash with potato masher. Add remaining indredients and heat through. Serve with bacon bits, green onions and shredded cheese if desired.

    We really like this soup, it is great on a cold day. I add onions, celery and green peppers to up the veggie content. I also use the pump butter spray as the butter substitute; don't know what LuckyMegan intended! - 12/20/14
