Roasted potatoes & celery root

Ingredients
2 lbs potatoes, in 1/2" dice1 large celery root (approx 1 lb.)6 shallots, sliced2 to 3 tbsp chopped fresh thyme3 tbsp. EVOO
Directions
Preheat oven to 425
Combine all ingredients in a large bowl
Spread mixture out on a baking sheet in a single layer.
Bake 40 minutes, turning once or twice. Vegetables should be nicely browned.
