Southwestern Lentil Salad

Ingredients
1 can black beans, rinsed & drained2-1/2 cups cooked lentils1 small can mexi-corn1 can diced tomatoes, no salt added1/2 cup chopped onion1/2 cup chopped bell peppers1/4-1/2 cup fresh cilantro1/4 cup olive oil1/4 cup balsamic vinegar1/2 T ranch dressing3/4 t cumin1 garlic clove, minced1 t lime juice1 t cayenne peppersalt & pepper, to taste
Directions
1. In a large bowl, combine black beans, lentils, mexi-corn, diced tomatoes, onion, peppers and cilantro.

2. In a small bowl, combine olive oil, balsamic vinegar, ranch dressing, cumin and garlic.

3. Pour dressing over lentil mix and season with lime juice, cayenne and salt and pepper. Chill for 4 hours to let dressing infuse with salad.

Yield ~10 servings (1-1/2 cup)
