Low Fat Polish Apple Cake

Dry ingredients:1.5 cup flour1 tsp baking powder1/4 tsp baking soda1/2 tsp saltWet ingredients:2 large eggs, beaten1/2 cup appleasauce, unsweetened1 cup granulated sugar1/4 cup fresh orange juiceFilling:4 tart-sweet apples, peeled, cored and sliced into 1/8 inch slices (Granny Smiths and Braeburns work well)2 tbsp brown sugar1 tbsp cinnamon1 tsp nutmeg1.5 tbsp lemon juice
Preheat your oven to 350F and grease/flour a 8x8 cake pan. Set aside.
For the cake batter:
Sift together the dry ingredients. Mix together the wet ingredients. Add the wet to the dry ingredients and mix well. Set aside and prepare the filling.
For the filling:
Peel, core and slice your apples into 1/8 inch slices. Sprinkle cut slices of apple with lemon juice to prevent browning. Sprinkle with brown sugar, cinnamon and nutmeg mixture and toss to coat apples thoroughly.
To assemble:
In your prepared cake pan, spoon half of your batter into your pan. Next, top the batter with half of the apple mixture. Top the apple layer with most of the rest of the batter. Add another layer of apples and then top this last layer of apples with dots of batter.
Bake in your preheated oven for 1 hour or until a toothpick comes out clean. Let cool in pan. Serve warm with a dusting of powdered sugar.
NOTE: This cake is even better the next day.
