"It's A Miracle" Rice Pudding

1 pkg. Miracle Shiritaki Noodles or Rice1 12 oz. can evaporated skim milk4 egg whites1 egg1 T Stevia or artificial sweetener to taste1 T Vanilla extract1 t Konjac Glucomannan Powder1/4 t cinnamon
Put a two quart bowl of water (may use only one quart of water, but you are using the two quart bowl because, later, if you have used a smaller bowl, the mixture may boil over) in the microwave and bring to a boil. While the water is heating, rinse the package of shiritaki noodles or rice shapes in a colander, in plenty of water. When the quart of water is boiling, carefully stir in the noodles, and continue to stir for one minute (this is to rinse the noodles and free them from the odor that is in the packaging liquid). After one minute, pour the noodles/rice back into the colander to drain. In a separate bowl, combine the evaporated skim milk, egg whites, egg, stevia, vanilla, and glucomannan powder, and beat until mixed but not foamy. (Do not wait to beat the mixture, as the glucomannan powder will begin to thicken right away). Pour noodles into a two quart bowl and pour liquid mixture on top. Add cinnamon. Slowly stir until thoroughly combined. Place in microwave and cook on high for two minutes. Turn and stir. Cook on high two more minutes. Turn and stir. Cook on high two more minutes. Let set for a few minutes. Enjoy. (You can bake this in the oven, using a baking dish filled with water that surrounds baking cups, which have been greased with butter, and filled with the mixture, and baked for 40 minutes. But why.) Makes 6 servings.
