New Years Day Black Eyed Peas

Ingredients
4 cups of cooked, drained lightly salted Black Eyed Peas1 Cup cooked, drained celery3/4 C onion 1/4 C Olive oil (separated)1/4 tsp of all-spice
Directions
boil celery in water until tender, set aside
boil black eyed peas to yield 4 cups cooked
saute onion in 2 tbs. of olive oil

combine ingredients with 1/4 tsp of all-spice and remainder of olive oil - stir constantly over low heat for 10 min. Can either be enjoyed hot or cold
yields approx. 10 1/2 C servings at 2WW Plus Points a serving
