Pumpkin Maple Flax Granola

COATING MIXTURE:1 cup canned pumpkin1/4 cup maple syrup1/4 cup honey1/4 cup Stevia in the Raw2 T canola oil1 T vanilla1 T cinnamonPinch of sea saltDRY INGREDIENTS:4.5 cups old fashioned oats1 cup sliced almonds2 cups whole grain puffed rice 2/3 cup flax seed meal1/2 cup quinoa flakesADD LAST:1/2 cup raisins1/2 cup Craisins
Preheat oven to 300 degrees.
Place all dry ingredients in a large bowl, mix and set aside.
In a small saucepan, combine the coating mixture ingredients until warm. Pour over dry ingredients and mix until all dry ingredients are coated.
Spread granola over parchment lined baking tray.
Bake for approx. 40 minutes, stirring every 10 minutes.
Once the dry ingredients are lightly toasted, transfer to a cooling rack and sprinkle with raisins and Craisins.
Once totally cool, store in cupboard for one week or indefinitely in the freezer.
Portion into 1/4 cup servings.
