Olive Oil - 1 TbspOnions - 1/2 cup, choppedGarlic - 1 clove, mincedDiced Tomatoes - 1 can (15oz)Vegetable Broth - 1 1/2 cupsTomato Paste - 1 TbspSalt, Pepper & Italian Seasoning - to tasteKidney Beans - 1 can (15oz), rinsed and drainedBlack Beans - 1 can (15oz), rinsed and drainedFrozen Vegetables - 16 oz bag
1. Heat oil in medium saucepan over medium-high heat. Saute onion until just soft, add garlic and cook for 30 seconds stirring constantly.
2. Add can of diced tomatoes, tomato paste, salt, pepper, Italian seasoning and vegetable broth and combine well.
3. Add beans and frozen vegetables, bring to a boil, allow to simmer for 30-35 minutes.
