Spinach Breakfast Sandwich

Ingredients
2 Slices Sarah Lee Whole Wheat Bread1 Med. Egg (Whichever way you wish to prepare it. I like mine scrambled)1 Slice Swiss Cheese (1 oz.)1/2 C. Spinach, Fresh*2 tsp. Dijon Mustard (any brand you like), 1 Garlic Cove, Minced, and 1 tsp. Kraft Lite Mayonnaise (the recipe calculator wouldn't let me put tsp. for mayo for some reason, but the recipe calls for one tsp.)
Directions
1. Wash, rinse, and dry spinach and put aside.

2. Spray griddle with non-stick cooking spray and cook egg.

3. Toast bread slices on griddle and melt cheese onto one slice.

*4. In a separate small container, mix together dijon mustard, mayonnaise, and minced garlic. Spread mixture onto non-cheesy slice of bread.

5. Add spinach and egg to bread and close into a sandwich.

You can add 2 pieces of soy bacon to this if you want and don't mind the extra sodium. Or if you want to make this a lunch sandwich, you can take out the egg and add more cheese, tofurkey smoked turkey slices, or a soy chicken patty (recalculate nutritional information accordingly).

The original recipe calls for 1 tsp. garlic mustard, but I don't have any of that, so I just added another tsp. of dijon and a minced garlic clove.
