1 cup chopped onion1 cup chapped carrots1 28oz can of crushed tomatoes1 1/2 cups of instant brown rice6 cups of low sodium chicken broth1/4 cup of whole wheat flour1 large egg2 tbsp fresh cilantro, chopped
Place chicken broth, carrots, onions and canned tomatoes in a large pot, over medium heat. Bring to a light boil. In the meantime. Combine ground turkey, cliantro, egg, whole wheat flour, 1/4 cup of rice until incorportated. Roll into small meatballs. Add the remaining rice to the the boiling broth and the meatballs, let simmer until meatballs are cook through. (salt and pepper to taste) serve with a squeeze of lime
