Lentil Sloppy Joes

Ingredients
1 tbsp olive oil½ c chopped onion¼ c chopped celery¼ c chopped bell pepper¼ c diced carrots ½ tsp oregano½ c lentils½ c ketchup1 cup water, or more as needed1/8 c red wine vinegar1 tbsp Worcestershire sauce½ tbsp brown sugarS & P to taste
Directions
Heat oil over med-high heat in a large skillet, preferably one that has a lid (mine didn’t, and I had to keep adding water as it simmered). Saute onion, bell pepper, celery and carrots with oregano for 5-7 minutes, until softened. Add lentils and mix, then ketchup, ¾ c of the water, red wine vinegar, Worcestershire, brown sugar, and S & P. Bring to a boil, then reduce to a simmer for 30 minutes, stirring every so often.
I had mine on an Arnold sandwich thin, open-faced, with pickles. Awesome!
