Butternut Squash Oven Fries

Ingredients
6 cups cut (french fry shape) butternut squash(Handcut or use a french fry cutter)1 TB olive oilkosher salt and cracked black pepper to taste - optionalcan make spicy with cayenne
Directions
Preheat oven to 450 degrees. Wash and peel squash. Remove seeds. Cut squash into french fry shapes. The smaller the pieces the faster they'll cook. I even purchased a french fry cutter with 2 sizes. Works great. Put into a bowl and toss with olive oil. Spread evenly with out overlapping on a sheet pan or cookie sheet. Bake 20 minutes. Flip over fries and return to oven for another 20 minutes. Bake time can vary depending on size of fries.
Sprinkle with optional kosher salt, pepper or cayenne.
Makes 12 -1/2 cup servings.

    REALLY REALLY good! No, they aren't crispy, but it doesn't detract from the taste. You have to remember, starch is what makes things crispy...and starch is what we're trying to reduce here. Nice! - 5/23/11

    try using a skinny french fry cutter. You could even go a little higher on the oven temp. Just keep an eye on them!
