Chicken Mushroom Wild Rice Soup

Ingredients
1 T Butter2.5 t Minced Garlic.5 Medium Onion, Minced2 14oz Cans Fit & Active Chicken Broth2 T Flax Meal3 t Fine Ground Sea Salt2 T Poultry Seasoning2 Small Frozen Boneless Skinless Chicken Breasts1 Cup Brown Basmati Rice1.5 Cup Lundberg Brown and Wild Blend Rice1.5 Cup Minnesota Wild Rice3 6.5 oz Cans Mushrooms4 c Frozen Spinach
Directions
Melt butter over medium-low heat and saute onions and garlic, add .25 cups of broth and flax meal, stir constantly until thickened, and very gradually add remaining broth, stirring constantly and allowing it to thicken slightly between additions. Stir in salt and poultry seasoning.

Add chicken breasts, cover and let simmer until chicken is cooked outside. Remove breasts and slice into 1 inch cubes, return to pot.

Add 12 cups of water and the rices, stir and reduce heat. Simmer covered for 1 hour, or until rice is tender.

Add remaining water, drained canned mushrooms and spinach, simmer 30 minutes, stirring occasionally.

Makes 28 1 cup servings.
