Easy Vegetable Ragu

Ingredients
2 Tbls Olive Oil1 Medium Onion, large dice1 cup Greep Pepper, large dice2 cloves garlic, minced1 tsp dried basil1/4 cup Sherry8oz Portabella Mushrooms, large dice1 cup Zucchini, quartered and sliced1 cup Yellow Squash, quartered and sliced2 cans Diced Tomatoes, undrained
Directions
Heat olive oil in a small soup pot over medium high heat. Add onions and pepper and gently saute until translucent. Add garlic and basil and saute 1 min. Add mushrooms and saute til softened. Add zucchini and squash and saute 1 min. Add sherry and scrape bottom of the pan well. Add tomatoes and bring to a boil. Reduce heat and simmer for 15 min. Serve over pasta or as a veggie side.
