1 lb sliced bacon1 med sweet onion chopped6 eggs, lightly beaten4 cups frozen shredded hash brown potatoes, thawed3 cups shredded cheddar cheese1 1/2 cups small curd cottage cheese1/4 cup shredded swiss cheese
Cook bacon, drain and roughly chop. Put in large bowl and add remaining ingredients. Transfer to 13 x 9 x 2 inch greased baking dish. Can be made ahead an put in refridgerator over night.
Bake in 350 degree oven for 35 - 40 minutes. Let stand for 10 minutes before cutting. Left overs are great warmed up for a minute in the microwave.
