Fat Free Poke Cake

Ingredients
1 1/2 cups all-purpose flour1/2 teaspoon salt2 teaspoons baking powder1/2 cup unsweetened applesauce1 cup white sugar1/2 cup Egg Beaters1 teaspoon vanilla extract3/4 cup milk1 package Jello (gelatin) mix
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Spray a 9-inch round spring form pan with nonstick spray. Dust lightly with flour.

2. Sift together the flour, salt and baking powder. Set aside.

3. In a large bowl, beat sugar, applesauce, egg substitute and vanilla until light and fluffy (about 4 minutes on high). Add the sifted ingredients alternately with the milk. Stir until just blended. Pour batter into prepared pan.

4. Bake for 40 - 50 minutes. Remove from pan and place upside down on a separate plate (or back in the same pan). Allow to cool 15 minutes.

5. While cake is cooling, dissolve 1 packet of Jell-O flavored gelatin (any flavor) in 1 cup boiling water.

6. Once the cake has cooled, poke holes all over the under side. Carefully spoon dissolved gelatin over entire bottom of cake. Chill 4 - 6 hours or overnight.
