Sandy's South Beach Quiche

Ingredients

1 pkg frozen chopped spinach8 eggs1/2 cup egg substitute3/4 cup shredded mozzarella cheese1/4 cup shredded parmesan cheese2.5 oz. jack cheese, diced1/2 large onion, minced1/2 red (or other color) bell pepper, diced1 chicken breast, baked or poached, and diceddash of each of these:saltblack peppergarlic saltgarlic powderMrs. Dashparsley flakes
Preheat oven to 350.
Spray 10x13 pan with cooking spray
Combine all ingredients and stir until well mixed.
Pour into coated pan and spread evenly.
Bake at 350 for 25 minutes, or until a knife inserted in center comes out clean.
Cool, cut into 28 squares.
Makes 14 servings of 2 squares.
Freezes well and can be reheated.
Can also add 2 7-oz cans of mushroom stems & pieces, drained.
If you prefer a different protein, add canned crab meat or salad shrimp in place of chicken.
