Cheesy Spinach and Tomato Chicken

2 tbsp. butter3 cloves garlic (minced)2 chicken breasts (butterfly cut in half)flour (for breading)salt and pepper2 cups frozen (or fresh) spinach1/2 green bell pepper1 cup tomato sauce3 slices American Cheese
Pre-heat oven to 375. Melt butter in a medium skillet and then slightly cook garlic until fragrant. Salt and pepper both sides of the chicken and sprinkle with flour. Brown both sides of chicken in garlic butter skillet (about 4 minutes each side). While chicken is cooking spread spinach in the bottom of a glass casserole dish. Then layer with chicken, green bell pepper and tomato sauce. Cover with foil and cook for 20 minutes. Uncover dish and add American cheese (better if cut up into little pieces) and cook for another 15 minutes. Serve over pasta and enjoy!!!
