1 tablespoon raisins1 tablespoon dred cranberries0.25 cup Fiber One cereal0.5 cup oats0.33 cup whole wheat flour0.25 cup artifical sweetner2 tablespoons brown sugar0.5 teaspoon baking powder0.5 teaspoon cinnamon1 tablespoon non-fat coffee creamer0.33 cup pureed peaches(I use one container baby food peaches)0.25 cup pumpkin0.25 cup egg whites
Preheat oven 375. Crush fiber one to bread crumb consistency. In a bowl, add crumbs, oats,flour,sweetner,brown sugar, baking powder, and cinnamon. Mix well. In seperate bowl dissolve creamer in 2 tablesspoons of hot water. Add peaches, pumkin and egg whites and mix thoroughly. Add to dry ingredients. Add raisins and cranberries and mix well. Spray baking sheet and spoon batter in to 6 mounds. Flatten a bit with back of spoon. Bake 15 minutes. Makes 6 cookies.
